Menu To start Curried cauliflower soup, duxelle croque monsieur and cauliflower bites, Pickled purple cabbage, cured salmon, tapioca squid ink crisp, seaweed crumb and cabbage gel, Ham hock ballotine, piccalilli gel, baked carrot purée and sourdough. To follow Rolled and stuffed turkey, smoked bacon chipolatas, turned vegetables and a rich red wine reduction Slow cooked beef, smoked pancetta and field mushrooms in a smokey burgundy sauce with a creamy pomme purée Hot smoked haddock, panned cockles, Jerusalem artichoke velouté Spinach, chestnut and mushroom cannelloni, baked in a blue cheese béchamel (v).
To finish White chocolate and Ferrero Rocher cheesecake Apple tarte Tatin with a fig jam and toffee vodka cream, served warm Parsnip, caramel, and chocolate slice, caramel gel, chocolate gel and parsnip meringue Steamed Christmas pudding, chocolate meringue, brandy ice cream and a redcurrant gel Tickets: £45 per person.
